Sesame Encrusted Baked Organic Tofu
Drizzled with a Thai Style Almond Sauce

Sesame Encrusted Baked Tofu

Servings: 4-6 people
Prep time: 45 min
Cooking time: 1 hour

Ingredients:

1 box firm organic tofu
1 1/2 cups white sesame seeds
1/4  cup toasted sesame oil
1/2 cup tamari soy sauce
1 tablespoon tahini
2 tablespoons lemon juiceC

Cooking Instructions:

Preheat oven to 350 degrees. Place the following ingredients into a blender or bullet. Sesame oil, tamari, 1 Tb. sesame seeds, & lemon juice, blend well, about 1 min. Set aside in a medium size bowl. On a clean surface, cut tofu into 3″ spears. Place the remainder of your sesame seeds into a medium bowl.

Line a baking sheet with parchment paper and begin dipping tofu spears into the sesame sauce, followed by the sesame seeds. Place encrusted tofu spears on lined baking sheet. Place in the oven for 1 hour, rotate spears at 30min. Continue baking tofu spears until golden brown and slightly firm.

Almond Sauce

Ingredients:

1/2 cup almond butter (creamy)
2 tablespoons toasted sesame oil
2 tablespoons tamari soy sauce
1 tablespoon lemon juice
2 tablespoons honey (optional)

Instructions:

Place all ingredients into a small saucepan on medium to low heat. Bring to a low simmer, while stirring constantly. Set aside. This sauce may be served hot or at room temperature.

Cilantro Dressing

Ingredients:

2-3 bunches of cilantro (depending on size). More is always better.
Juice from ½ lemon
2 tablespoons water
1 teaspoon olive oil, avocado oil, or sunflower oil. (Omitting the oil is also optional)
Pinch of salt. Season to taste.

Instructions:

Place all ingredients into a blender or bullet. Blend for about 1 min. or until all ingredients have been liquefied. Sauce should have a fresh bright green color.

Plating:

Place favorite variety of mixed greens and lettuce on to your platters. Add a few strands of purple cabbage and some small cherry tomatoes for color.
Top with Sesame Encrusted Tofu spears, dress with almond sauce, and place cilantro dressing on the side to dress greens as desired.
